Apple Cinnamon Bread

If my picky eater six year old says this is good, then it must be good. This Apple Cinnamon bread has a great flavor and gives you an excuse to eat the bread equivalent of a cinnamon roll any time of the day. This bread is super simple to make and will disappear off a plate faster than it took to make it.

For the Dough
  1. 1 Cup Water
  2. 1/2 Cup Milk
  3. 1/4 Cup Butter
  4. 4 Cups Bread Flour
  5. 2 tsp Salt
  6. 1/4 Cup Sugar
  7. 1 (2 1/4 tsp) Packet of Active Dry Yeast
For the Filling
  1. 3/4 Cup Sugar
  2. 4 tsp Cinnamon
  3. 2 Tbsp butter, melted, divided
  4. 2 Cups Apples, cored and chopped into small pieces, divided
Instructions
  1. Preheat oven to 350ºF
  2. Heat water, milk and butter to about 120ºF or just nuke it in the microwave for about two minutes an combine with the dry ingredients: Yeast Packet, 1 Cup Flour, Salt, and Sugar.
  3. Using a Stand Mixer mix all ingredients from step one using paddles or beater attachment for 4 minutes. After 4 minutes switch to a dough hook and continue mixing for 5-7 minutes while slowly adding the remaining 3 cups of flour. Dough should be smooth and elastic.
  4. Place dough in a large bowl that has been lightly oiled (I like to use olive oil) and flip dough until all sides are oiled. Cover and let sit until dough has doubled in size (between 2-3 hours minimum).
  5. After the dough has doubled in size remove from bowl and divide into two equal sized balls of dough. Let rest for 10 minutes.
  6. Roll each ball of dough into a 12x8 inch rectangle. Brush with melted butter and then evenly coat with cinnamon sugar mixture and apple pieces.
  7. Roll up the dough and place in greased bread pans.
  8. Bake at 350º for 35-40 minutes.
